Scallions are younger than green onions, harvested at an earlier stage of their growth. You can tell them apart by the width of the white bulb at the plant's base. As it has spent less time in the ground, a scallion's white bulb will be slimmer than a green onion's.

- Freeze Raw GREEN ONIONS (Scallions) - 1. Wash the scallions; let dry on clean paper towels or a kitchen towel. 2. Parchment line a baking sheet. 3. Chop/slice the scallions in desired length (I chopped them into ¼ inch pieces). 4. Place the chopped/sliced scallions on the baking sheet in a single layer. Do NOT mound up or that mound will clump together like a little mountain...you don't want that. 5. Place this pan of scallions in the freezer. I do it overnight; however, having them stay in the freezer at least 3 or more hours will also work. 6. Take the scallions out of the freezer the next day and put into a glass jar. Return the jar to the freezer. 7. When you need scallions use your frozen ones. This works great! - Media links.
