This easy to make Poha recipe is best for light and healthy breakfast or an evening snack. Also called Flattened rice it tastes great with ketchup, green chutney or chai. Poha is a delight for vegetarians and vegans. It mainly includes flattened rice, onion and potatoes. Some people also garnish it with besan sev (chickpea noodles) to give a crunchy taste. Other Names: Pauaa, Paunva, Poya, Chuda, Atukulu, Aval, Chiura, Chira, Chiura, Pauwa, Baji, Pohe, Phovu, Avalakki, Flattened Rice Ingredients: 1½ tbsp Cooking Oil 2 cups Thick Poha (aka flattened rice) ½ cup Chopped Onion 2 tsp Lemon Juice ¼ tsp Turmeric Powder ½ cup Potatoes (boiled and diced ) 2 tbsp Coriander Leaves (chopped) Salt (according to taste) 1 tsp Green Chillies (chopped) 7-8 Kadi Patta (Curry Leaves) 2 tsp Sarso (Mustard Seeds) 2 tbsp Peanuts Instructions: 1. First add water to poha in a bowl till it submerges completely, you can add more water if you need it. Then rinse it thoroughly for 30s. Leave it as it is for 2 mins till it softens. After two mins drain all water. Just mix it little with spoon to avoid any lumps. You can check poha softness by pressing it with your finger. 2. Now add oil to the pan, when its medium hot add peanuts and stir them till they are nice brown. 3. Once they are little brown, remove them from pan. We will use them later in the recipe, this will give crispy taste to poha. 4. Now in same pan add mustard seeds. When they start spluttering add few curry leaves and chopped onion, and mix them well. 5. Let onions cook till they turn light pink. Don’t overcook them to avoid losing onion taste. 6. Next add green chilies, turmeric, potatoes, little salt according to potatoes. Now Mix them well and keep the heat on low. 7. Now add fried peanuts, soaked poha, lemon and few coriander leaves. Then mix it well, make sure there are no visible lumps in poha. 8. Switch of the gas, cover the pan and leave it for 2 mins so that poha absorbs all ingredients. 9. Now poha is ready. Tips: 1. This dish cooks quickly, so stay at the stove to make sure nothing burns. Lower the heat if things start cooking too quickly. 2. If you want to make it healthier, you can also add more vegetables like green peas or finely chopped carrot. It will also provide different tastes. 3. If your poha is too dry, you can sprinkle little bit of water while cooking. How to Make Poha at home. झटपट बनने वाला आसान नाश्ता - पोहा #poharecipes #indoripoha #nashta #snacks Ingredients Poha (पोहा) – 2 cup (150 grams) Oil (तेल) – 1 to 2 tbsp Coriander Leaves (हरा धनिया) – 2 tbsp (finely chopped) Peanuts (मूंगफली)– ½ cup Lemon (नींबू) – ½ cup Curry Leaves (करी पत्ता)- 8 to 10 Green Chilli (हरी मिर्च)– 1 (finely chopped) Turmeric Powder (हल्दी पाउडर)- ¼ tsp Black Mustard seeds (राई) - ½ tsp Sugar (चीनी)-1.5 tsp Salt(नमक) – ¾ tsp (or to taste) Besan sev (बेसन सेव) How to make Poha : Take 2 cup medium thin Poha and rinse it. Drench the poha in water and drain it immediately. Stir the poha with a spoon. We don't need to soak the poha, just rinse it well. Add ¾ tsp salt or as per taste to the poha, followed by 1.5 tsp sugar. Mix well and keep aside for 15 minutes to set. Stir it once in the meanwhile after 5 minutes are over. Keep aside for 5 to 6 minutes. Heat a pan and add 1 tsp oil to it. Saute ½ cup peanuts in the oil till crispy. Once roasted and ready, take them out in a separate plate. To make poha add 1 to 2 tbsp oil to the pan and heat it. Add ½ tsp black mustard seeds to it and let them crackle. Reduce the flame to prevent spices from browning. Add 1 finely chopped green chili, ¼ tsp turmeric powder, roughly chopped 8 to 10 curry leaves. Add the poha to the pan and cook it for 2 minutes while mixing. Once poha is ready squeeze half a lemons juice over it. Mix it well.Turn off flame.Take it out in a plate. Sprinkle some besan sev, some peanuts and a little green coriander over the poha, Place a lemon wedge on the side and have a sumptuous bowl of Instant poha to soothe your hunger pangs. Suggestion: The thick variety of poha is used for making fried recipes whereas thin variety poha is used for making roasted namkeens which taste delicious. You can skip the use of peanuts in poha if desired. If you have roasted peanuts available then you can use them as well. You can add 2 green chilies as well if you desire eating spicy. If you are making this for kids, then skip the use of green chilies. You can skip the use of curry leaves if not available. Full written recipe for Batata Poha Prep time: 10-15 minutes Cooking time 15-20 minutes Serves: 3-4 people Ingredients: POHA | पोहा 3 CUPS OIL | तेल 2-3 TBSP CUMIN SEEDS | जीरा 1/2 TSP MUSTARD SEEDS | राई 1/2 TSP GREEN CHILLI | हरी मिर्च 2 NOS. CURRY LEAVES| कड़ी पत्ते 10-12 PEANUTS | मूंगफली 2 TBSP POTATO | आलू 2 MEDIUM SIZED (DICED) ONION | प्याज़ 1 NO. (CHOPPED) SUGAR | शक्कर 1 TSP SALT | नमक TO TASTE TURMERIC POWDER | हल्दी पाउडर 1/2 TSP FRESH CORIANDER | हरा धनिया A SMALL HANDFUL LEMON JUICE | निंबू का रस 1 TSP WATER | पानी A SPLASH FRESH CORIANDER | हरा धनिया A SMAL HANDFUL (CHOPPED) Method: In a large bowl add the poha, make sure that the poha that you are using are of the thick variety & they should be old. Add water into the bowl & gently wash the poha by mixing them in the water, then immediately strain the poha using a sieve, let the poha rest in the sieve for 8-10 minutes. While the poha is resting you can start the further cooking process. Set a pan over high flame, once the pan gets hot, add the oil & heat it well. Further add cumin seeds, mustard seeds, green chill, curry leaves & peanuts, mix well & cook over low flame briefly & then add the potatoes. Cook the potatoes over high flame until they are half cooked, make sure you half cook the potatoes before adding the onions, if you add potatoes & onion together then the onions will get overcooked. Once the potatoes are half done, add in the chopped onion & sugar, stir well & cook until the onion turns almost light golden brown over high flame. When the onion turns almost light golden brown the potatoes will also be cooked perfectly, lower the flame at this stage & add salt & turmeric powder, mix well & add the soaked poha along with fresh coriander & lemon juice, stir everything very gently. Further add a splash of water over the poha & cover the pan with a lid, switch off the flame & let the poha rest for 3-4 minutes, following this step will ensure that the poha turns out to be very moist & fluffy due to the steam. Remove the lid after 3-4 minutes & sprinkle some freshly chopped coriander. To the gravy, add in turmeric powder and red chilli powder. Mix well and cook until the moisture completely evaporates. 8. Add in salt and mix. Add in poha and mix. 9. Once the gravy is all nicely absorbed by poha in like 3-4 mins, add the roasted peanuts, chopped coriander and ghee at last. Mix it all well. 10. Yummy Tomato Poha is ready to be served hot and nice as it is or any coconut chutney by the side. Flattened rice, also known as Poha, is extensively used for making a lot of recipes in India. Wash the poha in a colander. Poha should be moist but not mashed. Add salt and sugar and mix lightly. 2. Heat oil in a non-stick pan. Add mustard seeds and when they splutter add green chillies, curry leaves and peanuts. 3. Sauté for half a minute and add onions and potato, continue to sauté. 4. Add salt, turmeric powder and mix. Sauté for two minutes and add poha. 5. Mix and cook till poha is heated through. Add lemon juice and mix lightly. Garnish with coriander leaves and serve hot.

In the other pan, put some Oil, Asafoetida/Hing Powder, Fennel Seeds, Cumin Seeds, Mustard Seeds. Turn the flame off, put some Turmeric Powder, Water, turn it on the flame again, and cook it for a min. Then turn off the flame and put the soaked Flattened Rice/Poha in the pan and mix them mix it well. Take a serving Bowl/Plate, put cooked Poha, nicely chopped Green Chilli, Lemin Juice, Poha Masala, Namkeen Sev, Roasted Peanuts, nicely chopped Onion, and some Coriander Leaves. Green chillies (less spicy & slit into half) हरी मिर्च For Jeeravan Masala 1 tbsp Fennel seeds, सौंफ 3 tsp Cumin seeds, जीरा 1 tbsp Coriander seeds, धनिया के बीज 1 tbsp Black peppercorns, काली मिर्च के दाने 6-7 no. Cloves, लौंग 1 no. Mace, जावित्री ¼ inch Cinnamon stick, दालचीनी 6-7 no. Bay leaf, तेज़पत्ता 10-12 Green cardamom, हरी इलायची 3-4 no. Dry kashmiri red chillies (broken into half) सूखी कश्मीरी लाल मिर्च ¼ Nutmeg, जायफल Salt to taste, नमक स्वादअनुसार 2 tsp Pink salt, काला नमक 2 tsp Ginger powder, सोंठ पाउडर A pinch of turmeric powder, हल्दी पाउडर ¼ tsp Asafoetida, हींग For Masala Peanuts 2-3 tsp Oil, तेल ½ cup Peanuts, मूंगफली ¼ tsp Degi red chili powder, दगी लाल मिर्च पाउडर Salt to taste, नमक स्वादअनुसार For Garnish Prepared Poha, तयार किया हुआ पोहा Masala Peanuts, मसाला मूंगफली Green chili, less spicy & slit into half, हरी मिर्च Ratlami sev, रतलामी सेव Masala Boondi, बूंदी Nylon sev, नायलॉन सेव Pomegranate pearls, अनार के दाने ½ tsp Prepared Jeeravan Masala, तैयार किया हुआ जीरावन मसाला Coriander leaves, chopped, धनिया पत्ता Lemon wedge, नींबू की फांक Jalebi, जलेबी Process For Indori Poha In a bowl, add thick poha, water and rinse it. Strain the water and keep it aside for further use. For Tadka In a pan, heat oil, add mustard seeds, cumin seeds, fennel seeds and let it splutter. Add green chillies, curry leaves and toss it well, turn off the flame, add turmeric powder, asafoetida and mix it well. Pour the Prepared tadka on the soaked poha, add sugar and give it a good mix. Add a little milk and mix well. Keep it aside for further use. For Steaming Poha In a kadai, add water and place a plate on top of the kadai. Add prepared poha, green chillies and let it steam for at least 15-20 minutes on moderate heat. Transfer it to a serving dish, garnish it with masala peanuts, green chillies, ratlami sev, masala boondi, nylon sev, pomegranate pearls, sprinkle prepared jeeravan masala, coriander leaves and lemon wedges. Serve hot with jalebi. For Jeeravan Masala In a pan, add fennel seeds, cumin seeds, coriander seeds and dry roast it for a minute on low flame. Add black peppercorns, cloves, mace, cinnamon stick, bay leaf, green cardamom, dry red chillies, nutmeg, salt to taste and dry roast it well. Add pink salt, dry ginger powder, turmeric powder, asafoetida and toss on low flame. Transfer it to a plate or tray to cool down at room temperature. Transfer it to a mixer grinder jar and grind it into fine powder. Keep it aside for further use. For Masala Peanuts In a pan, heat oil, add peanuts and roast for 2-3 minutes on moderate heat until golden in color. Transfer it to a bowl and strain the excess oil. Sprinkle some degi red chili powder, salt to taste and toss it well. (GRATED) POWDERED SPICES GINGER POWDER | सौंठ पाउडर 1/4 TSP DRY MANGO POWDER | आमचूर पाउडर 2 TSP BLACK SALT | काला नमक 1 TSP SPICY RED CHILLI POWDER | तीखी लाल w1 TSP KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TSP SALT | नमक 1/2 TSP TURMERIC POWDER | हल्दी पाउडर 1/2 TSP ASAFOETIDA | हींग A PINCH SUGAR | शक्कर 1 TSP Method: Set a pan on medium heat, add, cumin seeds, coriander seeds, cinnamon stick, fennel seeds, black peppercorns, cloves and bay leaf, dry roast them on low flame until aromatic, once toasted well transfer over a plate, add grated nutmeg and cool down to room temperature. Once cooled transfer the roasted spices in a grinding jar and add the remaining powdered spices & sugar, grind it well to make fine powder. Jeeravan masala is ready, store it in an airtight container and use it accordingly. Poha Ingredients: POHA | पोहा 3 CUPS WATER | पानी AS REQUIRED SALT | नमक TO TASTE SUGAR | शक्कर 2 TBSP LEMON JUICE | नींबू का रस OF 1/2 LEMON TURMERIC POWDER | हल्दी पाउडर A PINCH OIL | तेल 2 TBSP MUSTARD SEEDS | राई 1/2 TSP CUMIN SEEDS | जीरा 1/2 TSP FENNEL SEEDS | सौंफ 1 TSP GREEN CHILLI | हरी मिर्च 2-3 NOS. (CHOPPED) ASAFOETIDA | हींग A PINCH TURMERIC POWDER | हल्दी पाउडर 1/2 TSP Method: Add the poha into a sieve & rinse it very gently using water, then let the poha rest for 10 minutes, make sure you don’t soak it in water, just leave it in the sieve after rinsing. Once rested, separate the poha using a spoon, you will see that the poha has soaked perfectly. Add salt, sugar, lemon juice & turmeric powder & mix it very gently. To make the tadka set a pan over high flame & once the pan gets hot, add oil. Further add mustard seeds, cumin seeds, fennel seeds, green chilli, asafoetida & turmeric powder stir briefly & immediately pour the tadka over the poha & mix it in gently. Then place the sieve over a stock pot with boiling water, cover & steam the poha for 10 minutes. These 4 Poha recipes are from different corners of the country. There is the Banarasi poha also known as Chura Matar, the famous Indori Poha, Mumbai’s special Kanda Poha and Aval Upma, a south Indian way of making Poha. By the way, did you know there are more than 75 recipes of making Poha in India! Poha is very nutritious, light on the stomach and good for dieters and people trying to lose weight. You can try out these 4 Poha recipes alternated with other breakfast dishes throughout the week and enjoy these poha recipes every alternate day for a quick and easy breakfast or tea time snack! Recipe : 1. Banarasi Chura Matar Ingredients: 1 cup thick poha ¼ cup peas 1 tsp cumin 1 tsp chopped ginger 2 green chopped chilies 2 tbsp chopped coriander 1 tbsp lemon juice 1 tsp sugar ½ tsp pepper powder ½ tsp garam masala powder salt to taste ¼ cup milk 2 tbsp ghee Method: Rinse the chiwra through a strainer, drain well and soak in milk for 10 minutes. Heat ghee in a pan and add cumin seeds, add the ginger and green chilies when the jeera crackles add in the peas with sugar and salt, stir, cook for a few minutes till peas are done. Add in the powder masalas and the soaked chiwda and mix well, fluffing it up. Add coriander leaves and lime juice. Mix well and serve. 2. Indori Poha Ingredients 1 cup thick poha 1/4 tsp turmeric 1 tsp salt 1 tsp sugar For Tempering: 1 tsp jeera 1 cup chopped onion 1 tsp green chilies 1 tbsp oil A Few curry leaves For Garnish: 2 tbsp peanuts 1/4 Cup Indori sev or Ratlami sev Jeeravan masala 1 tbsp chopped coriander leaves 2 lemons Jeeravan Masala: ½ tbsp cumin seeds Pinch of asafetida 1 tsp coriander seeds ½ tbsp fennel seeds 1 black cardamom 3 cloves 1 tsp Kashmiri red chili powder 1/2 tbsp dried mango powder ¼ tsp cinnamon powder ½ tsp dried ginger powder ½ tsp black salt ¼ nutmeg ½ mace Method: Dry roast above mentioned spices except for powdered spices, nutmeg, and mace. Cool the spices, grind to a fine powder with remaining spices. Wash the Poha and drain well Add turmeric, sugar, and salt and gently mix. Steam poha for 5 to 7 minutes in a steamer. Set aside for 5 minutes. Heat oil in a pan. Add peanuts and stir-fry till they start to pop. Remove. Add cumin seeds to oil and allow to splutter. Add green chilies and a few curry leaves. Stir-fry for a few seconds. Add finely chopped onions and stir-fry till the onions are translucent. Add the steamed poha, fried peanuts and mix well. Garnish each serving with Jeeravan Masala, a generous helping of Sev and finely chopped coriander leaves. Serve with 1/2 a lemon on the side. 3. Kanda Poha Ingredients: 1 cup poha 2 tbsp oil 1 tsp mustard seeds 3 Green chillies, chopped Few curry leaves ¼ cup peanuts 1 boiled potato, cubed 2 onions, chopped Salt to taste 1 tsp turmeric powder ½ tbsp lime juice 1 tsp sugar Fresh coriander leaves Method: Wash the poha and drain well. Add salt and sugar and mix. Heat oil in a pan. Add mustard seeds and when they splutter add green chillies, curry leaves and peanuts. Sauté for half a minute and add onions and potato & sauté till onion is pink. Add salt, turmeric powder and mix. Sauté for two minutes and add poha. Mix and cook till poha is heated through. Add lemon juice and mix lightly. Garnish with coriander leaves and serve hot. 4. Aval Upma Ingredients 2 cups thick poha ½ tsp turmeric powder ½ tsp sugar salt as required 2 tbsp oil 1 tsp mustard seeds 1 t tsp chana dal 1 tsp split urad dal 12 cashews 1 tbsp peanuts 2 dried red chilies 1 tsp chopped green chilies 1 tsp chopped ginger 8 curry leaves 1 pinch asafoetida (hing) 1/3 cup finely chopped onion 2 tbsp grated coconut ¼ cup finely chopped carrots ¼ cup green peas 2 tbsp chopped coriander leaves Grated coconut to garnish 1 lemon to serve Method: Wash the poha & drain well. Add turmeric, sugar and salt to the poha. Mix gently and set aside. In a pan, heat oil and add mustard seeds. When the mustard seeds crackle, add chana dal, urad dal, peanuts and cashews. Saute till both the dals and cashews turn golden. Add onion, ginger, green chilies, dry red chilies, curry leaves and a pinch of asafoetida. Stir and saute till the onions turn translucent. Add the veggies and cook for 2-3 minutes to soften the vegetables. Add the poha. Stir and mix gently. Cook on a low flame for 3 to 4 minutes. Add coriander leaves and mix gently.
