I use about a third white American cheese, and two thirds Monterey Jack cheese. About 100 mL (half a cup) evaporated milk (cream is a good substitute; regular milk works but is less good) About a tablespoon (15g) of butter (very optional) A couple tablespoons canned or pickled green chiles (or just their juice) Some fresh cilantro leaves, if you're into that Salt, and whatever Latin-American spices you might like Method: Tear the cheese into chunks (or grate it) and combine it with the milk and optional butter in a pan. Turn the heat on medium-high, and stir until melted smooth and thick. Add all the other ingredients to taste. If the dip is too thick, add more milk; if it's too thin, add more cheese. Keep stirring until the foaming completely stops, and let it sit for a few minutes. Turn the heat on medium-high, stir and boil the juice until it's reduced by about half. Stir in the milk. Tear the cheese into chunks (or grate it) and throw into the pan with the optional butter. Stir until melted smooth and thick. Add all the other ingredients to taste. If the dip is too thick, add more milk; if it's too thin, add more cheese. Eat it with tortilla chips.

This easy white cheese dip recipe creates a creamy dip that tastes just like the queso at your favorite Mexican Restaurant. If you’ve ever wanted to know how to make queso dip on the stove…this recipe is for you! No velveeta, just real quality cheese and ingredients melted together and ready to dip. FULL RECIPE: 🤍 PIN FOR LATER: 🤍 INGREDIENTS: 12 ounces evaporated milk (1 can) 1 tablespoon cornstarch 3/4 lb white american cheese buy it sliced at the deli counter at your grocery store. Then chop into small squares, finely chopped 4 ounces mozzarella cheese shredded 2 tablespoons canned jalapenos chopped, or chopped green chiles 1 teaspoon chili powder you could also use cumin if you prefer that taste 1/2 teaspoon ground nutmeg optional. some readers haven't liked this spice although some did, SEE NOTE * 1 teaspoon red pepper flakes 1/4 teaspoon salt 1/4 teaspoon black pepper chopped cilantro tomatoes, and jalapenos for garnish INSTRUCTIONS: 00:00:07 - How to make queso dip 1️⃣00:00:33 - Chop quality cheese from the deli counter into cubed slices. We used White American cheese. 00:00:42 - Why did my cheese dip separate? How do I keep my queso from separating? 2️⃣00:00:44 - Heat evaporated milk in a medium saucepan over medium heat. Evaporated milk has less moisture so it's less likely to separate when cooked. Bring to almost a boil and then reduce heat to a simmer. 3️⃣00:01:14 - Add your sliced American cheese and shredded mozzarella to the sauce pan and stir to melt. Add in batches and stir until combined and smooth before adding more. 4️⃣00:01:52 - Check your cheese dip for desired consistency. If you'd like it thicker, add cornstarch or more cheese. 1994. Queso started out using the name Cheese. It all began as something to do after classes. Enzo Ruidera, 2ts Calinawan and Pow Rosal were schoolmates and decided to form a band. Eventually things got serious and they were winning battle of bands left and right. The kids thought this might lead somewhere and eventually got Ian Tayao, cousin to Pow Rosal to take on vocal duties. At the time both parties were starting to write original songs. So by the time they were ready to play they were already playing original songs in a time were playing covers was the cool thing. Landing regular gigs at hot spots back then like Club Dredd and Yosh café, they steadily got noticed and slowly earned a following. CJ Olaguera who was constantly with the band eventually learned to play percussions and was a logical addition to the band because he was already always there anyway and he added new texture to the sound of the band. By the time, they were regulars at a number of bars and clubs. 8 Toleran, a neighbor and former guitarist of the band Piranha asked Ian if he could auditon and join the band. As fate would have it, the band was actually looking for another guitar player. He fit in perfectly and he was in like that. RT de Ano, is another friend of the band and a dj. He was another logical choice to be absorbed into the band because he was always there anyways and the idea of having a dj in the band was shared by all of the members. By 1997, the band release and sold a two-song demo, the songs "Fine" and "The Way" were in it. Five thousand copies was sold out in a week. "Fine" eventually garnered airplay on NU107 and eventually hit the charts. The band was signed by Warner Music Philippines. 1998, the self-titled debut album "Cheese" was released. Critics and fans alike received it beautifully. The singles "10xkarma" and "Fine" climbed the charts and the band was nominated on a number of categories at the '99 NU107 Rock Awards. Maly Andres, the producer of the album won "Producer of the Year" for his work on that album. The album went on to win an Awit Award for for Rom Villaseran's work on the album cover layout. The band went on to a successful tour of the album, even going to Korea to represent the Philippines in the 2000 Pusan Rock Festival. After touring and playing provinces, special events, clubs and bars. The band went on to write new materials. Biboy Garcia who went on to record with the band on their sophomore effort replaced RT de Ano. 2001 saw the release of Cheese's second effort entitled "Pilipinas". The album was critically acclaimed, named "the richest rock release of that year". The album went on to win "Vocalist of the year", "People's Choice Award" and "Album of the Year" in the 2001 NU107 Rock awards. The band went on to tour the new album, successfully. 2003, Queso officially announced that they were changing their name to Queso from Cheese because that is what the kids were calling them and it was only logical. That same year drummer Pow Rosal was replaced by drummer Robert dela Cruz. Robert came in to continue touring the album all throughout the country. 2004, the band goes back to the studio to write new materials. 2005, Queso releases a DVD documentary about the band, members and their exploits. A year after, 2006, the band finishes recording and releases their latest self-titled effort "Queso". Again, locked and loaded, the band is poised yet again to smash barriers and open minds with their "don't give a f*ck" attitude and music. The band regularly plays school events, clubs and bars, special events and personally organized concerts or events by the band themselves.

Consider buying me a "coffee" here: 🤍 📸INSTAGRAM: 🤍 🔪MY GEAR: BOOS BLOCK CUTTING BOARD: 🤍 PLASTIC CUTTING BOARD: 🤍 6.75qt LE CREUSET DUTCH OVEN: 🤍 QUARTER SHEET PAN + RACK: 🤍 MY FAV STAINLESS BOWL: 🤍 MIXER: 🤍 BOX GRATER: 🤍 CHILE CON QUESO: ▪100g or 1 large poblano, charred and medium diced ▪60g or 4 1/2Tbsp butter ▪100g or about 2c onion, small diced ▪15g or 2-3 cloves garlic, minced/pressed ▪Salt ▪150g or 3/4c diced tomato ▪225g or 1/2lb Pepperjack, shredded ▪225g or 1/2lb Medium sharp cheddar, shredded ▪15g cornstarch ▪700g or 2 12oz cans evaporated milk Char poblano over burner for 90sec per side until charred on all sides. Transfer to bowl, cover & allow to steam & soften for 10min. Scrape off char & medium dice. Preheat pot over medium. Add butter. Once melted, add onion, garlic & pinch of salt. Stir. Sweat for 5min. Reduce heat to low, add tomato & poblano & cook for 4-5min. Toss shredded cheeses and cornstarch to coat. Add evaporated milk to tomato/poblano mixture on the stove, stir and increase heat to medium to bring to simmer. Once simmering, reduce heat back to low & stir in half the cheese. When nearly melted, stir in remaining half of cheese. Add salt to taste. SPINACH ARTICHOKE: ▪Olive oil ▪450g/1lb spinach ▪Salt ▪225g/1 8oz package cream cheese ▪110g or 1/2c mayo ▪110g or 1/2c sour cream ▪80g or about 1c grated parmesan (40g for filling, 30-40g to top) ▪65g or about 2 small-med shallots, rough chopped ▪5g or 1 medium clove garlic, minced ▪60g or 1/2c white cheddar, shredded ▪60g or 1/2c pepperjack, shredded ▪10g or 3/4Tbsp lemon juice ▪2g or 1/3tsp salt ▪2g or 3/4tsp black pepper ▪2g or 1/4Tbsp chile flake ▪240g/8oz artichoke hearts, chopped Preheat lrg saute over med high. Add squeeze of olive oil then spinach & a pinch of salt. Stir to combine then wilt down until tender and dried. Remove spinach and transfer to towels to squeeze out as much moisture as possible. Roughly chop spinach. Add cream cheese, mayo, sour cream, 40g of parm, shallot, garlic, and 60g/half of each cheese, lemon juice, salt, pepper and chile flake to food processor. Spin 30-45sec until well blended and becoming smooth. Add artichokes & spinach & spin for 15-20 sec until combined, but still a little chunky. Transfer to 8”x8” metal pan and sprinkle with additional 40g parm, 60g shredded cheeses. Bake 25–30min in preheated 425F/220c oven until browned on top and bubbling. BUFFALO CHICKEN: ▪450g/1lb boneless skinless chicken breast ▪225g/1 8oz package cream cheese ▪100g sour cream ▪175g hot sauce (i like Frank’s for this dip) ▪30g shallot, finely minced ▪10g minced garlic ▪50g or 3/8c pepperjack cheese, shredded, plus additional for topping ▪50g or 3/8c medium sharp cheddar, shredded, plus additional for topping ▪25g or 2 1/2Tbsp blue cheese + extra for topping (leave out if you dont like blue cheese) ▪1g/small pinch salt ▪2g or 3/4tsp black pepper ▪20g or about 1 ½Tbsp chipotle in adobo, minced Add breasts to well salted shallow pan of simmering water. Lower heat to med low and poach for 4min. Flip to 2nd side and continue to poach for 4-5min until internal temp reaches about 165F/74C. Remove from water and allow to cool for 10min before shredding and chopping meat. Add meat to bowl of stand mixer with cream cheese and mix with paddle attachment on medium until well combined. Add sour cream and mix until well combined. Add hot sauce, shallot, garlic, cheeses, salt, pepp, and chipotle and paddle on low to combine then increase speed to high until chicken is a bit more broken down and dip is homogenous. Spread into an 8”x8” pan, top with additional blue cheese, and shredded cheeses. Bake in preheated 400F/205C oven for 20-25min until bubbling and well melted. 🎧MUSIC: EPIDEMIC SOUND. Ok, so this Queso Blanco Dip is seriously amazing! Only 3 ingredients, simple and delicious. You must try this recipe because I guarantee you will love it. And you will be the hit at any party! Queso Blanco Dip 1 pound of White American 1 4oz can of green chilies 1/2 cup of milk (I use the can to measure the milk) Place all ingredients in a pot and stir frequently until melted. If you want the dip thinner add more milk, if you want the dip thicker add less. It does set up as it cools so if it seems thin just let it cool a little and it might be the consistency you like.
