It is often described as "traditional Indian ice cream" and is a traditional sweet of the Indian subcontinent. In India, it is commonly sold by street vendors called kulfiwallahs. Outside India, it is popularin Bangladesh, Myanmar, Nepal, Sri Lanka, and the Middle East. It is part of the national cuisines of Pakistan and Trinidad and Tobago. To prepare kulfi, sweetened, flavoured milk is slow cooked. The milk is stirred almost continuously to prevent it from sticking to the cooking utensil. During this process, the milk condenses and thickens. The slow cooking caramelises the sugar in the mixture and browns its milk proteins, giving kulfi its distinctive taste.The mixture is then poured into moulds (often kulhars) and sealed. The sealed moulds are submerged in an insulated matka filled with ice and salt. This quickly freezes the mixture, giving it a soft, smooth consistency free of ice crystals. Kulfi prepared in this traditional way is called matka kulfi. The moulds are removed from the freezer 10-15 minutes before serving to allow the kulfi to melt slightly. The kulfi is then removed from the moulds and garnished with ground cardamom, saffron, or pistachios. Bringing to you the most yummy Mango Stuffed Kulfi recipe🥭🥰 Made with only 6 ingredients, this summer delight is so creamy, so fruity, and oh so delicious 🫶🫶Try it today and have a mangolicious time🤌🥭 Ingredients: 🥭2 mangoes 🥭2 cups full fat milk 🥭2 tbsp milk powder 🥭2 tbsp sugar 🥭1/2 tsp cardamom powder 🥭6-7 saffron strands Instructions: 1. Slice off the top of the mango by slicing the head/cap of the mango. 2. Now, remove the seed of the mango while keeping the entire shape of the mango intact. 3. Firmly hold the seed and rotate it to loosen it further. Now pull it out and keep it aside. 4. Next, in a saucepan, add milk, sugar, milk powder, cardamom powder and saffron strands . Let this mixture come to a boil. 5. Now reduce the heat and let the milk simmer till it is reduced down to half its quantity. 5. Once the milk has reduced down, transfer it into a clean bowl and let it cool down completely. 6. Pour the kulfi mix into hollowed mango till top. And put the mango cap to cover it 7. Mango kulfi and other amazing Indian street foods at 🤍 When I was in Delhi, India, my main goal was to search out and eat as many Indian street foods and interesting things as I possibly could. After doing some searches, I finally came across Kuremal Mahavir Prasad Kulfi Wale, a long standing ice cream vendor in the alleys of Old Delhi. Just a short walk from the Chawri Bazar metro station, down an ancient looking lane is the sleepy shop. I came to Kuremal Mahavir Prasad Kulfi Wale to mostly sample something known as mango kulfi, which is the equivalent of a mango ice cream or gelato that's Indian style. At this particular shop in Delhi, they first take the finest mangos, which are normally alphonso in variety, hollow out the seed from the middle, and then fill the center with a special mixture of cream and spices. The mango is then covered with a thick layer of clay and allowed to freeze until turning into a solid brick. When you order the mango kulfi, it is then removed from the freezer and the vendor hammers off the clay from the top of the mango. Using nothing short of a hacksaw blade, the vendor slices of the skin from the mango. When that's all done, he slices the mango into thin bite sized pieces and puts them all the on the plate. Mango kulfi at Kuremal Mahavir Prasad Kulfi Wale is a real treat. It's frozen so hard, and the delicious mango goes so well with the thick Indian ice cream that's lightly flavored with a mixture of spices that includes cardamom. Delhi, India, is full of delicious Indian street food, but after a long day of walking around the streets of Old Delhi, there was nothing more satisfying than a freezing cold plate of mango kulfi! Stir occasionally, and simmer for 10 minutes. Now, in a bowl add rice flour and little milk mix it well. Pour this mixture into the pot and stir continuously for 5-10 minutes. Add crushed green cardamom and mix it well. Add sugar and mix well till the milk thickens and turn creamy. Now starin the phirni so that you get a smooth texture. In another sauce pot, add mango pulp, sugar and cook it for a few minutes. Add mango dice and mix well. Now, add the mango pulp in the strain phirni mixture and mix well. Pour it into a bowl or a container and keep in the fridge until it's set properly. Finally, serve chilled mango phirni garnished with a few mango slices and mint leaves. For Mango Malai Kulfi In the remaining mixture of the phirni add malai/cream , condensed milk and mix it well. Add pistachios and mix well. Pour in mixture in a kulfi mould. Keep in the freezer to set for 4-6 hours or overnight. To get kulfi out of the mould by rubbing with your palms, it will get loose and slide out. And I am going to make a fun twist on the classic kulfi by adding our seasonal fruit mangoes and make a creamy and delicious Mango Kulfi. Prep time: 10 hours Cook time: 20 minutes Number of Servings: 4-5 persons Ingredients Milk - 2 1/2 cups Mango - 2 nos Sugar - 1/2 cup Unsweetened Khoya - 3 Tsp Cardamom powder - 1/2 Tsp Saffron Mixed nuts Corn flour - 2 Tbsp Pista Badam Kulfi recipe:🤍 Matka Kulfi recipe: 🤍 You can buy our book and classes on 🤍 Method 1. Boil the milk till it reduces to 3/4th of the quantity. 2. Meanwhile, in a mixer jar add the chopped mangoes, and sugar 3. Grind it to a fine paste 4. After the milk has reduced, add the unsweetened khoya 5. Mix it till it dissolves in the milk and add cardamom powder 6. Mix cornflour and milk in equal proportions and add the slurry to the milk 7. Mix it continuously so that there are no lumps. Add sugar and mix well 8. Add a pinch of saffron and cool down the mixture completely. 9. Add the mango pulp and mix it. 10. Pour the kulfi mixture into a glass or a kulfi mould (You can add mixed nuts at the bottom of the mould) 11. Insert the popsicle sticks into the kulfi mixture and freeze it for about 8-10 hours 12. Recipe in Urdu: Ajza: -White chocolate grated 300g -Coconut oil 2 tbs -Mango puree approx. 1 Cup -Sugar 2 tbs -Bread slices 2 -Olper’s Milk powder 1 Cup -Sugar 6 tbs -Elaichi powder (Cardamom powder) ½ tsp -Mixed nuts chopped 3-4 tbs -Olper’s Milk 1 litre -Mango essence ½ tsp -Chocolate melted Directions: -Jug mein white chocolate aur coconut oil dal ker 1 minute kliya microwave ker lein phir chocolate melt ho janay tak ache tarhan mix ker lein. -Plastic cups/kulfi molds mein melted white chocolate dal dein aur cup ko tilt ker ka evenly pheela lein, excess ko remove ler lein aur 15 minutes kliya refrigerator mein set hunay kliya rakh dein phir chocolate coating ko repeat karein aur excess ko remove ker ka set ho janay tak refrigerate ker lein. -Saucepan mein mango puree aur cheeni dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein & side per rakh dein. -Blender jug mein bread slices,milk powder,cheeni,elaichi powder,mixed nuts aur doodh dal ker ache tarhan blend ker lein. -Karahi mein blended mixture dal ker ache tarhan mix karein aur ubal anay ka bad halki ancch per garha ho janay tak paka lein (12-15 minutes) & musalsal chamcha chalatay rahein. -Cooked mango puree dal ker ache tarhan mix karein aur halki ancch per 5-6 minutes kliya paka lein. -Mango essence dal ker ache tarhan mix karein. -Chamcha chalatay hoye room temperature per thanda ker lein, -Tayyar kulfi chocolate molds mein kulfi mixture dal dein,aluminum foil sa cover karein aur kulfi sticks insert ker lein aur 8 hours or overnight kliya freezer mein freeze ker lein (makes 8). -Melted chocolate drizzle karein aur kulfi ko carefully cup/molds sa nikal lein aur melted chocolate drizzle ker ka serve karein!

Full written recipe of Stuffed mango kulfi Prep time: 5 minutes Cooking time: 30-35 minutes Serves: 4-5 people Ingredients: • Milk 2 litres • Khoya 500 gm • Elaichi (crushed) 2-3 pods • Ripe mangoes 4-5 nos. or more (required. 400gm of puree) • Sugar 100 gm • Ripe Mangoes (used as a container for setting kulfi) • Chopped nuts for garnish Method: • Set a heavy bottom vessel on medium heat, add milk and cook until it starts to boil, stir in regular intervals. • Once it starts to boil, add khoya & crushed elaichi, stir continuously until the khoya dissolves in the milk. • Wash the mangoes well & cut the side to scoop out the flesh, also to avoid the any wastage squeeze the seed as well with hands as even that has too much of pulp. Transfer the flesh in a grinding jar and blend into a fine puree. Make sure we require 400 gm of mango puree, so you can adjust the quantity of mangoes accordingly. • Coming back to the milk, scrap off the sides and cook with the milk, cook until it’s been reduced to half. • Add sugar to the milk, and cook for 10-15 minutes & reduced the milk to 1/3rd quantity. • Now as the base for kulfi is ready, remove half for malai kulfi in a bowl and let the half be in the wok for making the mango kulfi base. • Keeping the flame low, add the fresh mango puree and stir continuously and cook for 5 minutes. • As both the bases are ready, cool down to room temperature. • Now, take whole mangoes and trim off the head, carefully try to remove the seed without damaging the mangoes, discard the seeds and fill the cavity with the cooled down kulfi mixture, freeze the kulfi in the freezer for 6-8 hours to set. 1 cup double cream 1 cup evaporated milk 1 cup powdered milk 1/3 cup sugar 1 cup mango puree ( use store bought or Fresh ) 1 tbsp saffron water (optional) In a blender , add milk powder, evaporated milk, sugar , double cream and saffron water. Blend it well. In the end mix with mango purée. It will bring out yellow colour (otherwise you can use fresh mango chunks or purée same in blender and blend) Add in a mould and freeze for 3-4 hours Take out and Insert sticks Freeze for another 6-8 hours Leave on counter for 5 minutes Take out of the mould and serve immediately.

Mango Kulfi I मैंगो क़ुल्फ़ी I Pankaj Bhadouria Here is a recipe of Mango Kulfi without using Khoya or Corn flour. A good Mango Kulfi is made using full fat milk. This recipe is made in the traditional way to make a good Malaidaar Kulfi. Saffron is added to the kulfi mixture to add on to the flavor and color. If fresh Mango is not available, you can also use tinned Mango Puree for making the Kulfi. Thank you for watching! 💫 And don’t forget to subscribe here: 🤍 * Recipe : Mango Kulfi Preparation time: 10 minutes Cooking Time: 20 minutes Makes: 7-8 Ingredients: 1 liter Full Cream Milk ¼ cup Milk Powder ½ cup Sugar 1 pinch Saffron 2 tbsp chopped Pistachios 1 cup fresh Mango Puree Method: Boil the milk in a pan. Once it comes to a boil, add in the milk powder. Mix well and simmer for 2-3 minutes. Add in the sugar. Mix in well. Reduce the heat and allow to simmer for 2-3 minutes. As the milk simmers, a layer of malai will start accumulating on the surface, with the help of a skewer, push it aside. Allow another layer to accumulate and push that aside too. Repeat the process after every 1 minute till you have a malai rich mixture ready with you. Add in the Saffron and allow to simmer till the mixture is reduced to half. Add in the chopped Pistachios. Cool the mixture and mix in the Mango Puree. Pour the mixture into the kulfi molds and freeze for 7-8 hours. Once set, demold and serve Fresh Mango Kulfi.
