Ingredients 100g gram flour, sieved 1 medium onion 3 medium potatoes 1 tsp of salt 2 tsp of garam masala 1 tsp of turmeric 2 chillies, finely chopped 1 tbsp ginger, grated (optional) Handful of coriander, chopped 2 tsp of dried fenugreek leaves 1 tsp of cumin seeds ½ tsp of red chilli powder Water Oil for deep frying Method Heat up the oil in a karahi or wok to a medium heat. Slice the onion lengthways very thinly and place in a bowl. Peel and grate (or very finely chop) the potatoes into the same bowl. You can also use aubergines and cauliflower - chop into very small pieces. Sprinkle all the dry spices and freshly chopped coriander, chillies and ginger into the bowl and then sieve in the gram flour - mix together using your hand. Add a small amount of water a little at a time to create a thick batter that coats all the vegetables. Squeeze the mixture through your fingers to ensure all the spices mix through. Do not leave the batter and vegetable mixture for too long before cooking. Test your oil is hot enough by dropping a little batter into the oil. If it browns and rises immediately then it is ready. Very carefully drop in spoonfuls of the mixture into the oil and fry until golden brown. Using a slotted spoon move the pakora around, be careful not to overcrowd the karahi. Once golden brown and crisp remove from the oil and set on some kitchen paper.

I love Pakoras especially when they are crispy and crunchy, and when I take my first bite and they are super soft and fluffy on the inside. Pakoras are not only eaten on special occasions, but can be enjoyed any time of the day and my perfectly spiced Spinach & Potato Pakoras are a wonderful accompaniment to a hot cup of chai, or as a starter for a nice meal for guests. Make these to enjoy with family and friends, during a meal, as a snack, or as a festive feast served up during the month of Ramadan, these will go down a treat. Now, add beaten curd and mix it, add water as required and make smooth batter. Add rice flour, oil and mix everything well and keep it aside for 9-10 minutes. For Stuffing Bhavnagri Chili Slit the chillies and keep it aside for further use. In a bowl, add paneer, coriander leaves, salt to taste, green chutney, nylon sev and mix it well. Now, add roasted coriander seeds and give it a good mix. Stuff the prepared mixture in the bhavnagri chillies. Keep it aside for further use. For Pakora Cut the onions, potatoes and tomatoes into medium size slices. Now, cut the paneer into medium size cubes. Slit the bhavnagri green chillies into the middle and keep it aside for further use. For Bhajiya In a bowl, add all cut vegetables, roasted coriander seeds, fennel seeds, cumin seeds, carom seeds, salt to taste, green chili and mix it well. Squeeze the vegetables properly and remove the excess water. Now, add turmeric powder, ginger garlic paste and mix, then add gram flour and mix everything properly. Keep it aside for further use. For Frying Dip the potatoes, onion, paneer, and tomato slice into the batter and fry on moderate heat Once the vegetables are half done, remove and keep it aside. Now, dip the stuffed bhavnagri green chillies into the batter and coat with a nylon sev and place into hot oil, once green chillies are cooked well, remove it on a absorbent paper and keep aside for further use. Now, add bhajiya mixture in small parts and deep fry until it’s crisp from all the sides Remove and keep it aside for further use. Add green chili into batter and place into hot oil and fry until nice crispy texture on it. Now, deep fry the half done pakoras on moderate heat until crispy. For the chicken pakoras, firstly the dry ingredients are simply added to the marinated chicken to coat it and then add some more spice to your own taste. Prepare Pakoray: -Pot mein baisan,namak aur baking soda dal ker ache tarhan mix ker lein. -Thora thora ker ka pani shamil karein aur ache tarhan mix ker ka smooth batter tayyar ker lein. -Dhania,lal mirch powder,hari mirchein,pyaz aur hara dhania dal ker ache tarhan mix ker lein. -Karhai mein oil garam karein,crispy aur golden hunay tak pakoray fry ker lein. -Add fried pakoray ko kadhi mein dal dein,mix karein aur 1-2 minutes kliya paka lein. For Tadka: -Frying pan mein oil aur pyaz dal ker translucent hunay tak fry ker lein. -Lehsan dal ker fry karein. -Sabut lal mirch dal ker mix karein,zeera aur curry pata dal ker ache tarhan mix ker lein. -Ab tadka ko kadhi ka upper dal dein aur chawal ka saath serve karein.

In a mixing bowl add gram flour, red chilli powder, turmeric powder and salt to taste. Add water as per the thickness for the batter. ● Spread coriander chutney on one side of the bread slice and over lap with the paneer slice on it. ● Spread the prepared aloo stuffing on the other side of the bread slice. ● Cover with another half slice and cut the edges of the bread slice. ● Deep into besan batter covering both the side. ● Deep fry into hot oil.
