As far as I know there is nothing on the market even close to this price point that can do what this oven can do. Nearly No-Knead Sourdough in the Anova Precision™ Oven

Recipe developed by Andrew Janjigian for Anova Culinary This is an easy, long-fermented sourdough with great flavor for minimal effort, with a crisp crust and a holey, irregular crumb. It uses bread flour, with the addition of 10% whole wheat flour for a boost of wheaty flavor and a tan-hued crumb. To develop gluten without kneading, it relies on a long fermentation, along with a brief 20-minute rest before the salt is added, a trick known as an autolyse, and a single set of folds early on. The shaped loaf gets placed in a banneton or a towel-lined colander and is then proofed in the refrigerator for 8 to 24 hours, where it develops flavor and firms up, to encourage clean, dramatic slashes upon baking. The few recipes in the Anova Precision Ovens app did not use the sous vide mode to cook the wings which I found rather odd, so I used a recipe I had done before using the standard sous vide in a water bath and deep fryer.. Sous vide mode with 100% steam for 2 hours and then air fry them with 450f temp with no steam in regular mode with both rear and top elements. I ended up swapping the racks positions half-way through the air frying stage! They turned out Great! A canelé is a small French pastry from Bordeaux traditionally flavoured with rum and vanilla. It has a beautiful custard centre with a dark, thick caramelized crust. An amazing balance of flavour and texture! They are known to be notoriously hard to perfect. Today I unbox and carry out four tests with the new Anova Precision Steam Oven. How evenly does it grill? Does it work well at low temperatures? Is the sous vide as good or better than traditional immersion units? And finally does the steam feature work well for baking bread? Is it worth the money or just an expensive over-engineered oven? It's been over 10 years since I posted my first video. Decided to relaunch the video a couple of years ago. Managed to finish my first season and will soon be launching season 2, which will feature trips to Botswana, Zimbabwe, Namibia and South Africa and a host of recipes prepared back in my less tiny kitchen. Challenge is to take inspiration from my trip and recreate some of the dishes I encountered. Why have certain techniques been developed? Are there techniques to make the process of some food preparation easier? Are there techniques to make the food taste even more awesome? I'm a home cook that is looking to find answers through the process of messing around in the kitchen and trying things out, as well as travelling and eating in order to compare and contrast foods and cooking techniques from different cultures. Let’s face it: Baguettes are a challenging bread to pull off consistently well, especially for a beginner. But one of the challenges to making a great home-baked baguette is made easy by using an Anova Precision™ Oven, which has the ability to quickly fill with steam. Surrounding the baguettes with steam during the first few minutes of baking ensures proper oven spring, scores that expand fully, and a crisp, well-browned crust. This recipe uses a long-fermented, nearly no-knead approach for a dough with great flavor and a silky, easy-to-handle texture. It uses bread flour, along with 10% whole wheat flour, for a boost of wheaty flavor and a tan-hued crumb. It also calls for a small amount of diastatic malt powder, a natural enzyme that helps promote the conversion of starch into sugars, driving fermentation and ensuring proper caramelization of the crust during baking. (This is a specialty item that can be found online from baking supply companies like Breadtopia.com; be sure to use *diastatic* malt, not malt sugar or syrup, which are sweeteners.)
